Ingredients

4 cups Water

1 cup Brown sugar

1/4 cup Salt, non-caking agent

3 lbs Salmon, preferably Norwegian or steelhead trout

Description

Directions

Mix water, salt, and brown sugar to make the marinade. Adjust quantities depending on size of fish.

Marinate the fish for 4 hours in refrigerator; adjust time depending on size of fish.

Transfer fish from marinade to a wire rack on a baking sheet and place in refrigerator, ideally overnight.

Set Traeger smoker to "Smoke" setting and let it stabilize in the 150-165°F range.

Place fish in smoker and smoke for 2 hours.

After 2 hours, optionally, smoke for another 1 hour at 225°F.

Serve with ranch dressing or sour cream dip of your choice.
